Alu Vadi (आळू वडी)
The dish which I am posting today , is very common in most of the Maharashtrian households.Alu leaves are also known as 'Taro leaves' or अरबी के पत्ते in Hindi . These are also used to make sabzi (Alu Bhaji) . A lot of people have this plant in their homes and thus get fresh Alu leaves for the recipe. There are two varieties of these leave -one with a green stem and the other with reddish brown stem. Always try to get the later one with big leaves. Take a look at the delicious steamed Vadi recipe:
Ingredients:
- 8-10 Alu leaves
- 1 cup Gram Flour (बेसन)
- 1/4 cup Tamarind Pulp (इमली का पानी )
- 1 tablespoon crushed jaggery / sugar
- 1 teaspoon Coriander Powder
- 1 teaspoon Turmeric Powder
- 1-1/2 teaspoon Chilli Powder
- 1 teaspoon Cumin Seeds
- 1 teaspoon Sesame Seeds
- 1 pinch Asafoetida
- Salt to taste
- Oil for frying
Method:
- Wash and Dry the Alu leaves .Cut the stem and keep them aside.
- In a bowl , mix gram flour, salt,turmeric powder,chilli powder,coriander powder ,sesame seeds, crushed jaggery , asafoetida and tamarind pulp . Add some water to make a thick batter (like the one we make for Potato Vada)
- Keep two leaves (preferably of the same size) upside down ,one over the other.
- Spread a thin layer of the batter covering entire leaf.
- Make a tight roll of the leaf starting from the base towards the tip.
- Make rolls of the remaining leaves as well.
- Steam the rolls for 20 minutes . You can use a pressure cooker , Idli pot or a thick-bottomed pan for steaming.
- Let them cool down for 10 minutes and then cut into small rolls.
- These can be shallow fried, deep fried or can be eaten as it is with a tampering of mustard seeds.
A lot of people add mince garlic which also tastes great. Always remember that you should always add something sour while making any recipe with Alu leaves as they contain some kind of acid crystals which may cause itching in the throat .
