Til Wadi (तिल वडी)

Makar Sankranti , kites and til-gul go hand in hand to give a special flavour to the festivities. The best part about this festival is that people from different parts of the country celebrate this 'harvest festival' in their own way , according to their traditions and rituals. Gujaratis celebrate it as 'Uttarayan' , Punjabis as 'Lohri'  , South Inidans as 'Pongal' and UP'ites as 'Khichiri'. Also , the sweets prepared to mark the occasion are prepared in different ways with the different permutation combination of the same ingredients. While making Til Wadi, most of the people use गुड/ गुळ /jaggery and sesame seeds to make wadi , my mom uses sugar . So i also tried the same while making them. Take a look at the recipe :

Ingredients:
  • Brown Til /Sesame seeds -300 gms
  • Sugar - 300 gms
  • Water -2 cups
  • Cardamom Powder - 1 tablespoon
  • Granted Coconut- 1 small bowl
  • Ghee for greasing 
Method:
  • Dry roast the sesame seeds till they start spluttering. Keep them aside
  • In a thick-bottom pan , mix sugar and water and boil it well to make a thick syrup
  • In the mean time grind the roasted sesame seeds coarsely and add the mixture to the boiling sugar syrup
  • Stir it well to avoid lumps. Keep it on a low flame till the mixture leaves sides
  • Add cardamom powder 
  • Grease a plate and quickly put the mixture as sugar immediately becomes hard 
  • Grease a spoon with ghee and spread the mixture evenly 
  • Garnish it with grated coconut and cut into square before it cools down
  • Keep the wadi in an air-tight container

For a variation , you can also add ground roasted peanut. I made these laddus as a variation :
