Bharwan Karela (भरवां करेला)

Most of you must have heard this in Hindi -करेला उपर से नीमचढ़ा . So its very clear that the veggie is something which (in most of the cases) never makes to our 'Favourite' list due to its bitter taste. But as a matter of fact it is one of my favourites veggies and i love cooking it in a lot of ways. You can use tamarind juice or chopped onion or onion paste for making it. But the one which I am posting right now is my Mom's recipe and liked by many (even those who otherwise don't eat it at all).Take a look at the recipe :

  • 7-8 medium sized Karela
  • 1 tablespoon Salt 
  • 1 tablespoon Lemon Juice
For Stuffing:
  • 3 -4 spoon Roasted Groundnut powder (coarse)
  • 2 spoon Coriander Powder
  • 1 spoon Garlic Paste
  • 1 teaspoon Fennel Seeds
  • 1 teaspoon sugar
  • 1 teaspoon Turmeric Powder
  • Salt and Chilli Powder to taste
Oil for frying

Preparation Time : 20 minutes

Serves: 4-5

  • Peel the Karelas.  Slit them lengthwise and remove the seeds
  • Sprinkle salt and lemon juice and let it marinate for 1 hour
  • For the stuffing , mix all ingredients in a bowl and keep it aside
  • Now remove the karelas from salt and squeeze to remove bitterness
  • Heat oil in a pan and saute the karelas till they become bit tender. Let them cool down for a while

  • Fill-up the stuffing in the karelas. As the stuffing is dry , it may come out. So tie a thin thread around them .

  • In a pan , heat 1 tablespoon oil .  Add asafoetida and now put karelas . Cover them with a lid and cook on slow flame till the karela becomes crisp.
  • Serve with Chapati 

 You can store these crisp karelas for 7-8 days in the fridge and microwave it before eating . So try the recipe today and i am sure you gonna love it. HAPPY COOKING !
