Corn Tikki

Corn has been my favorite since childhood. I still remember how I used to go on a long drive with my parents in the rainy season and my Dad never forgot to buy 'Bhutta -with namak-mirchi and lime' for me and my mom who is also a Corn fan. Interestingly , my in-laws also love corn and the recipes with corn as the main ingredient. Corn is not only tasty but is also packed with a high amount of nutritional value. The kernels are usually roasted but you can also boil them or steam them with salt with eat with a dash of lime juice.
So ,was just thinking of what special should i cook as today is my Father-in-law's birthday and i decided to make these Corn Tikkis which are easy to make and yummy. You can serve these as a starter or as a side dish. Take a look at the recipe:

Ingredients:
  • 2 cups boiled Sweet Corn Kernels
  • 2 medium sized Potatoes-boiled and mashed
  • 1 medium Onion- finely chopped
  • 1 spoon Ginger-Garlic Paste
  • 2 spoons Green Chilli Paste
  • 1 teaspoon Fennel Seeds 
  • 1 teasppon Coriander powder
  • Chopped Coriander
  • 1 tablespoon Semolina for Coating (रवा)
  • Salt to taste
  • 1 teaspoon Chat Masala
  • Oil to fry
Preparation time: 20 minutes

Cooking Time: 10-15 minutes

Serves: 4

Method:
  • Blend the boiled corn kernels into thick and coarse mixture. Don't add water at all.
  • Add mashed potatoes, chopped onions, green chilli paste, ginger-garlic paste, salt, fennel seeds ,Coriander Powder and Chopped Coriander. Mix well.
  • Divide the mixture in equal portions and make round tikkis . 
  • Put semolina in a plate and dust the tikkis in it so that both sides are covered with it. This way the tikkis get a crisp layer on the top after frying.

  • Heat little oil in a frying pan / non-stick , and shallow fry the tikkis till they turn golden brown.Fry them from both sides.

  • Sprinkle some chaat masala .
  • Serve hot with Tomato sauce or green chutney.
