Rajasthani Kadi Pakora(राजस्थानी कढ़ी पकौड़ा )

Indian food is a perfect blend of different cultures and various methods of cooking. Due to my dad's transferable job , we got an opportunity to live in different parts of the country which enabled us to relish on the regional and local food varieties. We had a gala time during his tenure in Neemuch , a state in central India which shares its North Eastern border with the state of Rajasthan. So most of the time, we used to plan weekend trips to Chittorgarh, Udaipur , Gandhi Sagar Dam and what not. Farm House parties were also a common weekend trend :-) which gave us ample opportunities to savour mouth-watering delicacies , smothered in spices and chillies. Rajasthani Kadhi Pakora( राजस्थानी कढ़ी पकौड़ा) was one such dish I instantly fell in love with. It is commonly known as 'Khatta Kadhi Pakora (खट्टा कढ़ी पकौड़ा). So yesterday i decide to give a facelift to the routine kadhi. Here's the recipe:

Ingredients: (For Kadhi)
  • 2 cup Sour Curd
  • 2 tablespoon Bengal Gram Flour (बेसन)
  • 1 teaspoon Asafoetida (हिंग)
  • 1 Clove
  • 1/2 teaspoon Turmeric Powder
  • 3-4 dried Red Chillies
  • 1 teaspoon Ginger Paste
  • 1/2 teaspoon Fenugreek seeds
  • 3-4 Garlic cloves (finely chopped)
  • 1 teaspoon Cumin seeds
  • Oil - 1 spoon
For Pakora 
  • 1 cup Gram Flour
  • Salt to taste
  • 1 teaspoon Turmeric Powder
  • 1/2 teaspoon Asafoetida
  • 1/2 spoon Cumin Seeds
  • 1 spoon Hot oil
  • Oil for frying
Serves: 4
Preparation Time: 20 minutes

Method:
  • Mix curd and besan in a thick bottom pan and whip it to avoid lumps . Now add enough water to obtain a pouring consistency.
  • Add salt &  ginger paste and let it cook on slow flame till it starts boiling.
  • For tadka ,heat oil in a pan . Add asafoetida , chopped garlic, fenugreek seeds, clove , turmeric powder ,cumin seeds and dry chillies.Add it in the yogurt mixture. Let it boil for another 5 minutes and then keep it aside.
  •  To make pakora, mix all ingredients in a bowl with water to obtain a thick batter.
  • Add 1 spoon hot oil and mix well.
  • Heat oil in a pan and fry pakora till light brown. 
  • Put Pakora in the Kadhi and garnish it with fresh coriander.

  • Serve hot with plain rice or Khichdi.
