Vegetable Soup

As a kid , Soup was something which i never wanted to have even if i was famished. But as i grew up , i started enjoying this warm and filling food which is 'kind' to the stomach. One can experiment a lot with soups , as far as the ingredients are concerned. You can add anything which goes well with your taste buds. Right from vegetables to lentils to chicken and what not, you can do wonders even with the basic ingredients available. I love this simple but quick and tasty soup which can be made even when you have a real long day at work. All you need is:

Ingredients: (For Vegetable Stock)
  • 1/2 cup roughly chopped Cabbage
  • 1/2 cup chopped Carrot
  • 4-5 Cauliflower florets
  • 2 tablespoon chopped Spring Onions
  • 2 tablespoon Green Peas or Boiled Kidney Beans
  • Salt to Taste
 Other Ingredients:
  • 2 small green Chillies (cut lengthwise)
  • 1/2 cup Carrot Juliennes
  • 1/2 cup Chopped Spring Onions
  • 10 Cauliflower Florets
  • 2 tablespoon chopped Cauliflower
  • 5 Paneer Cubes (optional)
  • 2 teaspoons Vinegar
  • 1 spoon Lemon Juice
  • 2 teaspoon Garlic Paste
  • Fresh Coriander Leaves
Preparation Time : 20 mins

Serves: 4-5

Method:
  • For the vegetable stock , boil all ingredients with approx. 4 cups of water for 15 mins till the veggies are bit tender and the water reduces by 1 cup.
  • Keep it aside till the veggies settle down at the bottom .
  • Discard the veggies . Stock is ready for use.
  • Now boil this vegetable stock in a thick bottom vessel . 
  • Add chillies, Carrot Juliennes, chopped cabbage,spring onions, Cauliflower florets , Garlic Paste and Paneer cubes .
  • Add Lemon Juice , Vinegar and Salt and let it boil for 5-7 mins.
  • Serve Hot with a garnishing of Coriander leaves.

You can also add some Soy Sauce for a tangy taste. So make this healthy soup and say
