Mango-Sago Delight


I just saw the status message of one of my colleagues who has recently moved to Australia . It read ‘Someone send me Mangoes:-). This sounds like a genuine appeal from an ardent Mango Lover. The King of fruits with its fragrance and rich taste leaves you craving for more. My home is no exception and so these days our fridge is always stuffed with Mangoes.
 For quite a long time, I was thinking to make an off-beat prep with mangoes. While searching a mango recipe online, came across this recipe which is not only unique but also very easy to make. Also, it is something which is not very sweet and one can indulge in while fasting. Here comes the recipe:

Ingredients
·        2 medium sized Mangoes (preferably Hapus or Kesar for a deep yellow color)
·        ½ cup Sago (Sabudana)
·        1 small cup Condensed Milk
·        ½ cup Milk
·        1 small mango for garnishing
·        Sugar(if needed)
 
      Cooking Time: 20 mins

      Serves: 4

      Method:
 ·        Soak sago for 2 hours. Wash thoroughly to remove excess starch.
·         Boil water in a deep vessel and add soaked sago. Cook it till it becomes translucent.
·        Drain water in a strainer and wash the boiled sago under running tap water so that sago doesn’t get sticky. Keep it aside.
·        Peel the mangoes and chop them in small cubes.
·        Blend the mango cubes with condensed milk and milk to smooth paste.
·        Put this paste in a deep bowl. Add the cooked sago and mix well.
·        Refrigerate it for 2-3 hours as the dessert tastes best when served chilled.
·        Garnish it with small mango cubes or fresh mango pulp.
