Egg Frankie
The pious month of Shravan is over and believe me my hubby is one of those happy souls who find it hard to resist when the carnivorous temptation strikes .Being a staunch vegetarian , i never cook non-vegetarian dishes at home and so he hardly gets an opportunity to indulge in the food he truly loves. So this weekend, when i suggested making this Egg Frankie for him, he squealed with joy.He loves the Egg Rolls at Kapila so i tried to make it in the similar way. This recipe is quite easy and you can have it as a full meal.
Ingredients:
- 2 Eggs
- 2 Chapatis
- 1 medium Onion(finely chopped)
- 1 medium Tomato(finely chopped)
- 2 Green Chillies (finely chopped)
- Cheese Slices
- Tomato KetchUp
- 1 teaspoon Ghee
- Chaat Masala
- Salt to taste
Preparation Time: 10 mins
Cooking Time : 5-8 mins
Serves: 1
Method:
- Beat the eggs with little salt.
- Add chopped onion, tomato, green chillies and cilantro. Mix well.
- Heat little ghee in a frying pan and add half of the beaten egg mixture.Spread it evenly.
- Carefully place 1 paranta over the half-cooked omelet and cook it for 2 minutes.
- Turn around the paratha , put 1 cheese slice and fry the paratha for 1 minute.Take it out from the pan.
- Put 1some tomato ketchup and spread evenly.
- Add chopped onion, chopped capsicum and cucumber slices(optional).
- Roll the paratha carefully and press with a spat.
- Cut into pieces.
- Sprinkle some chat masala and relish this sumptuous roll.
