Mixed Fruit Ice Cream

'Ice cream is happiness condensed'  says Jessi Lane Adams. How true :-) The rich and creamy desserts may leave your figure-hugging outfits looking at you with pain and disgust for making the waistline broader by few inches. But then who can resist that scoop full of ice ,nuts and rich cream. But i am sure this home-made Mixed Fruit ice cream would not be that sinful as i have not used cream at all . And also it comes with the goodness of fruits (hope this statement helps you overcome the guilt of having an extra scoop :-P) . Here comes the recipe:

Ingredients:
  • 1/2 ltr Milk
  •  2 cups chopped fruits (Apple, Chiku, Grapes , Pomegranate, Banana-optional)
  • 1/2 cup condensed milk
  • 1 tsp Vanilla/ Butterscotch Incense
  • 1/2 katori Sugar
  • 1 tblspn Custard Powder
  • Edible Color
Preparation Time: 20 mins

Serves: 4-5

Method:
  • Boil the milk . Add sugar and mix well.Keep it aside. 
  • Add the custard powder in the condensed milk and whip well. Add this mixture to the boiled milk and stir for 5 mins. Let it cool down.
  • Put all the fruits in a Mixer jar (except pomegranate kernels) and blend them . Remember not to make a puree . The mixture should be coarse.
  • Add the fruit mixture to the milk and mix well.
  • Add the incense and edible color and stir again.
  • Chill it in the freezer till set.
  • Serve topped with pomegranate kernels and other chopped fruits . You can also add some chocolate sauce to enhance the taste.

You can also re-blend the set ice cream to get a smoother texture and re-freeze. This yummy mixed fruit ice cream is surely not going to harm your fitness regime so relish it without any worries ! HAPPY COOKING !!
