Tutty Fruity Cake

Hi All.. This post comes after a brief hiatus and as i restart the flow of  recipes I thought ki kuch meetha ho jaye . And so this recipe of a Tutty Fruity Cake emerged as the best option. 
Baking a cake always takes me back to the days when an inquisitive me would observe my mom while baking a cake and tried to absorb every bit of it . A special mention that my mom has not attended any baking classes and still she makes one of the best cakes in the world . 
I always wanted to bake a cake as good as hers and so i diligently follow the same recipe with different ingredients :-) .Here comes one of the easiest cake recipes :

  • 2 eggs
  • 125 gms Maida
  • 125 gms Sugar
  • 1 tsp Ghee
  • 1/2 cup Full Cream Milk
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 cup Tutty Fruity
  • 1 tsp Vanilla Essence
Preparation Time: 15 mins

Cooking Time: 25-30 mins

  • Sieve Maida, Baking Powder and Baking soda and keep aside.
  • Beat the eggs .Add ghee and sugar and beat again till smooth.
  • Add the flour in 3 additions , alternating with milk. Don't over beat.
  • Now add the vanilla essence and mix well.
  • Pour the batter in a greased tin . Add tutty fruity evenly to the batter. You can also sprinkle some flour over the tutty fruity just to ensure they remain tender.
  • Bake in a preheated oven for 40 mins or if you are using a gas oven like me, 25-30 minutes will be sufficient . The aroma tells you when the cake is ready but if you are a beginner ,insert a toothpick in the cake and if it comes out clean, your cake is ready.
  • Let it cool down and then cut into pieces.
