Jowar Ukad

With high humidity levels and excruciating heat, summer is all set to make you feel tired and drained out. And all you can think of is a slice of juicy watermelon, a glass of iced tea , a dollop of ice cream and what not. When it comes to food, one wants to have light, nutritious and non-fatty meals. So this time i am sharing a simple but very nutritious recipe which is quite common in Maharashtrian households -it is called Ukad. Traditionally , it is made with rice flour and buttermilk. But i have used Jowar flour( also known as Sorghum or White Millet) to make it more nutritious and light. If you are bored with your regular breakfast dishes, you can try this yummy recipe loaded with the goodness of protein, fibre and vitamin A.Take a look at the recipe:

Ingredients:
  • 1 cup Jowar flour
  • 1/2 cup Curd
  • 2-3 cups Water
  • 2-3 Green Chillies-finely chopped
  • 2-3 Garlic Cloves
  • Salt to taste
  • For tampering: 1 spoon oil , 1 tsp Mustard Seeds , 2-3 Curry Leaves , a pinch ofAsafoetida
  • Chopped Coriander for garnishing
Preparation Time:  5-10 mins

Cooking Time: 5-10 mins

Serves: 2

Method
  • Beat the curds and add enough water to make buttermilk.
  • Add jowar flour and salt and mix well removing all the lumps.
  • Keep this mixture aside for 5 mins.
  • Heat oil in a thick bottom pan. Add asafoetida & mustard seeds- let them splutter.
  • Add green chillies, chopped / minced garlic cloves and curry leaves.
  • Now add the jowar- buttermilk mixture and stir continuously to avoid lumps.
  • The mixture will start getting thicker. You can add more water to get desired consistency.
  • Cover it for 5 mins and your dish is ready to be savored.
  • Garnish it with chopped coriander and serve it hot.

This yummy recipe will keep you energetic throughout the day and will keep the hunger pangs in check.Also,you can have this health and light dish at dinner time . The only key to relish it , is to serve it hot.
