Schezwan Sauce
Hello folks..As mentioned in my last post , i am back with the recipe for Schezwan Sauce. Wanted to try this for quite a long time. Whenever i make noodles or manchurian , i always feel that the home-made version of this sauce is always a better choice. If you surf on the net , you will get a lot of versions of the sauce with slight change in the ingredients.So i read 2-3 posts for reference and finally decided to make the sauce. Here comes the recipe:
Ingredients:

Makes: 1 medium bowl of Sauce

Ingredients:
- Red Chillies-12
- Chopped Garlic Cloves-1/4 cup
- Chopped Ginger- 2 tblspn
- Oil- 2-3 tblspn
- Soya Sauce -1/2 tspn
- Tomato Ketchup- 1/2 tspn
- Pepper Powder- 1/4 tspn
- Salt to taste
- Water- 1 small katori
Cooking Time: 10 mins
Makes: 1 medium bowl of Sauce
Method:
- Remove the seeds from red chillies and soak them in water for an hour. Grind them into a smooth paste. You can little water if needed.
- Heat oil in a pan. Add chopped garlic and ginger and saute on low flame till garlic turns brown.
- Add red chilli paste , mix well and cook till oil oozes out.
- Add soya sauce, tomato ketchup , pepper powder and salt to taste.
- Add water to this mixture and cook till you get a sauce-like consistency.
