Schezwan Sauce

Hello folks..As mentioned in my last post , i am back with the recipe for Schezwan Sauce. Wanted to try this for quite a long time. Whenever i make noodles or manchurian , i always feel that the home-made version of this sauce is always a better choice. If you surf on the net , you will get a lot of versions of the sauce with slight change in the ingredients.So i read 2-3 posts for reference and finally decided to make the sauce. Here comes the recipe:

Ingredients:
  • Red Chillies-12
  • Chopped Garlic Cloves-1/4 cup
  • Chopped Ginger- 2 tblspn
  • Oil- 2-3 tblspn
  • Soya Sauce -1/2 tspn
  • Tomato Ketchup- 1/2 tspn
  • Pepper Powder- 1/4 tspn
  • Salt to taste
  • Water- 1 small katori
 Preparation Time: 10 mins

Cooking Time: 10 mins

 Makes: 1 medium bowl of Sauce

Method
  • Remove the seeds from red chillies and soak them in water for an hour. Grind them into a smooth paste. You can little water if needed.
  • Heat oil in a pan. Add chopped garlic and ginger and saute on low flame till garlic turns brown.
  • Add red chilli paste , mix well and cook till oil oozes out.
  • Add soya sauce, tomato ketchup , pepper powder and salt to taste.
  • Add water to this mixture and cook till you get a sauce-like consistency.
You can use the sauce for a week . Yo can make pasta ,fried rice or a paratha using this. You can increase the quantity of the ingredients as per your taste but remember that the sauce is quite spicy to ingredients like pepper powder and soya sauce should always be used in moderation.
