Vermicelli Upma

The much awaited Pre-Monsoon rains have finally arrived and seems every one is feeling 'blessed '. Though it may be a blessing for others, for me it is a season full of mess and dunno why but it usually gets me down. The only thing i love about monsoon is enjoying piping hot vada-paav or bhajiya with a cup of tea or coffee. It is too tempting and we leave no opportunity to have this yummily sinful street snack. 
In the rainy season a lot of people look for healthy breakfast or dinner options to keep the digestive system in check . So i thought of making this Vermicelli Upma which is easy to cook, yummy , healthy and doesn't make your digestive system work hard. Take a look at the recipe:


 Ingredients
  • 1 cup roasted Wheat Vermicelli /Semiyan
  • 1 medium Onion -finely chopped
  • 2-3 Green Chillies-finely chopped
  • 4-5 Curry leaves
  • A pinch of Asafoetida
  • 1 teaspoon Oil
  • Mustard Seeds
  • Salt to taste
  • Fresh Coriander-finely chopped
  • Roasted Peanuts

Preparation Time: 10 mins

Cooking Time: 10 mins

Serves: 2

Method
  • Heat oil in a pan. Add asafoetida and mustard seeds and let them splutter.
  • Add curry leaves,green chillies ,onion and roasted peanuts and saute till onion becomes transparent.
  • Add 2 cup water and salt. Mix well.
  • When the water starts boiling, add vermicelli .
  • Cook covered on a medium flame ,stirring occasionally till its done.
  • Garnish it with chopped coriander and serve hot with pickle .

You can also add vegetables like carrot , green peas , capsicum etc to enhance the taste and nutritive value. You can increase or reduce the quantity of water depending on the thickness of vermicelli.
