Black Chana Dip (Desi style Hummus)
'Food has no boundaries' .So very true. Eating and tingling your taste buds with the specialties of different states and different countries is something which has no rules as such. Also, food gives you the liberty to use your imagination and to adapt the dish as per our taste.
During our trip to Egypt , we were introduced to a whole host of mouth watering delicacies like Falafel, Lemon and Garlic Potato Salad, Fava Beans , Koshari and what not. Hummus was one of the delicacies i instantly fell in love with. It was served with nearly all meals we had for a week!

Hummus is basically a middle eastern dip made with chickpeas, which is served with pita bread. There can be many variations, depending on the ingredients you would like to add. I tried making a desi version of the dish and used black chana in this variation of the dip. Take a look at the recipe:
Ingredients
- 1 cup boiled black chana
- Water of boiled chana - 1 small katori
- 2-3 tspn Lime juice
- 1 tblspn Olive oil (If you don't want to add Olive oil, you can use cooking oil)
- 2 green Chillies
- 3-4 Garlic cloves
- 1 tspn Cumin Powder
- 1/2 tspn Black Pepper powder
- 1 medium katori roasted and powdered sesame seeds (substitute of Tahini)
- Few springs of fresh coriander
- Salt and chilli powder to taste
Cooking Time: 5 mins
Method:
- Take the boiled chana and all the spices and other ingredients in a blender .
- Add powdered sesame seeds ,oil and lemon juice and blend to a smooth paste by adding boiled chana water.
- Garnish with fresh coriander and serve with Grilled sandwiches.
- You can also use this as a spread to make veg sandwiches or to make veg roles.
