Mix Veg Tikkar

It's that time of the year , when the temperature in the country drops and everyone is cuddled up in the best winter-wear -sipping hot tea or coffee. This is the time when the first month of the year just slips away with all fun and frolic , celebrations and wedding season. This is the time when market is full of winter special delicacies and lots and lots of veggies and this is something which motivates a hardcore Indori like me to think of some recipes for the optimum utilization of these fresh green veggies.
Since the last couple of weeks , i am diligently experimenting in the kitchen irrespective of the erratic schedule and must admit that my passion for cooking always gives me a high .LOL. 
I recently tried this Mix Veg. Tikkad recipe . Tikkad is a rajasthani bread which is usually made by mixing maize /bajra flour and wheat flour. It is thick and is made with a stiff dough minus oil or ghee. With all the veggies that i have added , the bread become wholesome , yummy and nutritious. It is bit similar to the maharashtrian thalipeeth but smaller and thicker in size.
Take a look at the recipe:

Ingredients:
  • 1/2 cup Jowar flour
  • 1/2 cup Bajra flour
  • 1/2 cup Wheat flour
  • 2 tspn Besan
  • 1 1/2 cup finely chopped and boiled veggies -Carrot , Peas , French Beans , Potato, Beetroot
  • 1 Onion-finely chopped
  • 3-4 Green Chillies -finely chopped
  • 2 tspn Red chilly powder
  • 2 tspn Turmeric powder
  • 2 tspn Garlic paste
  • Fresh Coriander -finely chopped
  • Salt to taste
  • Oil
Preparation Time: 25 mins

Cooking Times: 10-15 mins

Method:
  • Combine all the ingredients and knead into a stiff dough . Leave aside for 10 mins.
  • Make small balls of the dough and roll out into a circle of 4" and thickness of a mathri (approx.1/4")
  • Prick the tikkar all over with knife.
  • Cook the tikkars on griddle till both sides are golden brown.
  • You can add little oil if you want to carry it in lunch box as tikkar are bit chewy.
 Serve with curds/ carrot salad and green chatni or spicy moong daal. You can add other boiled beans or other veggies as per your taste. This can be a good option for your kid's lunchbox meal as well. HAPPY COOKING!
