Fruit Cake

For the past few months, the cook in me is religiously telling me to try making a variety of cakes.Though i have made a couple of them in the past few years like tutti frutti, vanilla cake, etc., its was early this year that i tried some new versions like Fresh Pineapple cake, Fig cake and Fresh strawberry cake. Then one fine day i thought f making this Fruit cake which i wanted to make for quite a long time. But the complicated recipes with an extensive list of ingredients always demotivated me. So after surfing a lot many sites , i finally tried to make one by using simpler ingredients and it came out really well. I am sure you will also find it easy to make. Here's the recipe:

Ingredients:
  • 1 1/2 cup Maida
  • 2 Eggs
  • 1 cup Sugar
  • 2 tbsp Honey
  • 1 1/2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Ghee
  • 1 cup Apple Juice ( I used Tropicana Apple Juice)
  • 1 cup Chopped Dry Fruits (Cashews, Dark Raisins , Seedless Dates, Almonds, Walnuts , Tutti Fruity)
  • 1 1/2 tsp Orange Zest

Method:
  • In a jar / deep bowl add the apple juice, orange zest and chopped dry fruits. Keep the jar in refrigerator and let it soak for 2 days.
  • Beat eggs, butter and sugar.
  • Add maida, baking powder, baking soda and cinnamon powder and beat till you get a light and fluffy batter.
  • Now add honey and soaked dry fruits. Mix Well.
  • Grease the baking tin and pour the batter consistently. Bake it for 35 mins (using a gas oven). If you are using a micorwave then preheat the oven at 180 degree and bake for 40 mins.
  • You can serve it immediately with a cup of tea or cut into slices and store it in airtight container.
 You can add other dry fruits as well. Make sure the pieces are not too big and they are evenly soaked in the juice. HAPPY COOKING !!
