AALU HARIYALA
Aalu is an integral part of an Indian Kitchen. One of my friends goes to the extent of saying 'aalu nahi to kuch nahi '. Jokes apart...When planning a party or dinner , one can make optimum use of this indispensable veggie and believe me it can do wonders to the menu. I recently made this mini aalu recipe- Aalu Hariyala which is quick and easy and goes well with any menu. Check out the recipe:
Ingredients:
250 gms Mini Potatoes
1 Medium Bunch Fresh Coriander
2 tspn Ginger Garlic paste
1 tspn Green Chilli Paste
1 tspn ground Cumin
1 tspn Turmeric Powder
1/2 tspn Black Pepper Powder
1 squeeze Lemon Juice
Salt to taste
Oil
Preparation Time: 15 mins
Cooking Time: 15-20 mins

Ingredients:

Method:
- Peel the potatoes, prick them and wash with fresh water. Drain well.
- Fry the potatoes in batches ,till they turn golden brown. Drain on absorbent paper. Keep aside.
- Remove stalk of coriander , clean them and chop finely.
- Grind the chopped coriander in a coarse paste.
- Heat 1 tspn oil in a pan. Add ginger-garlic paste and chilli paste. Saute till the raw smell goes away.
- Add cumin powder and black pepper powder.
- Add turmeric powder and fried potatoes .Cover with a lid and cook till the potatoes are tender.
- Add coriander paste and salt. Mix well so that all potatoes are evenly covered.
- Cook for another 4-5 minutes. If needed , you can add some water so that the potatoes get cooked easily. Make sure you saute the potatoes till the water is completely absorbed .
- Add lemon juice. Lemon juice not only adds to the flavor but also retains the lovely green color.
- It can be served as a starter or even as a dry veggie in a menu.

Hi Chandana, nice recipe...will surely try it once..but a small clarification needed. In step 2, you have mentioned to fry potato...does this mean deep fry or just fry in little oil.
ReplyDeleteHi Indu.. Thanks for your kind words. I had deep fried the potatoes as they get cooked easily when you have little time in hand . You can also shallow fry to cut down the oil content . :-)
