Red Lentil Salad
In these sweltering summer days, all we want is to stay at home ,gluttony takes a backseat and the stomach wants something light ,cool and crunchy. This extremely easy salad makes for a light and filling meal. It is great all year round but is a great option in summer when served cold.

Ingredients:
- Whole Red Lentils -2 cups
- Chopped Cucumber- 1 cup
- Chopped Onion- 1/2 cup
- Chopped Capsicum- 1/4th cup
- Chopped Cabbage- 14th cup
- Juice of 1 fresh Lemon
- Chopped Coriander
- 2 tspn Cumin Powder
- Chaat masala as per taste
Method:
- Soak lentils for 30 mins .Boil in water till they are soft but still have a bite. Let it cool down.
- In a bowl, mix lentils and chopped veggies.
- For the dressing ,whisk together the lime juice, chaat masala and cumin powder.
- Pour this dressing on the lentils and veggies and toss gently.
- Refrigerate for 15-20 mins before serving.
- Garnish with chopped coriander and mint leaves.
