Stir Fry Veggies in Garlic Sauce

Its the first day of April and seems Summer is in full form. Not only the appetite is sluggish but also the sheer sight of the sad veggies available in summer make the meal time a dull affair. 
So to add some zing to the dinner time , I recently made this easy Stir Fry Veggie recipe . I make Mix veg quite often but this time i have also used a stir fry sauce for added flavor.All sad veggies in the refrigerator have gone into the making on this yummy recipe.Take a look  :

Ingredients:
  • 3-4 Baby Corn -Thickly sliced
  • 10-12 French Beans 
  • 1 Medium Capsicum -diced
  • 1 cup Cauliflower Florets
  • 1/2 cup Chopped Carrots
  • 1 Medium Potato -diced (par boiled)
  • 1/2 cup Frozen peas
  • 1/2 cup other veggies (brinjal ,lauki etc. as per availability)
  • 1/2 medium Onion- finely chopped
  • 4-5 Kashmiri Red Chillies-soaked for 3 hrs in lukewarm water. Make sure your remove the seeds before you soak them.
  • 1 tbspn Minced Garlic / Garlic Paste
  • 1 tbspn Cornflour
  • 1 tspn pepper powder
  • Oil
  • Salt to taste
 Cooking Time: 20 mins
Serves: 4

Method:
  •  Heat oil in a pan and add spring onions. Stir for 2 mins before adding other veggies
  • Add other veggies one by one . Keep stirring with a wooden spatula
  • Season with salt and pepper powder
  • After 2-3 minutes , the veggies will become bit softer. Keep them aside
 For the garlic sauce:
  • Make a fine paste of soaked red chillies
  • Heat oil in a pan
  • Add garlic paste and stir for 2-3 minutes. Now add chilli paste 
  • Add 1/2 cup water , corn flour and salt and stir continuously so that lumps don't form in the sauce
  • Cook for 2-3 minutes
Pour this sauce on the stir-fired veggies and mix well.  Garnish with chopped coriander / chopped spring onion greens.You can add or remove veggies as per your choice.

Remember that while stir-frying veggies, put small quantity of veggies at a time ,let them fry for few seconds and then only add the next lot.  HAPPY COOKING !
