Sun-Dried Veg Fritters
Come summers and most of the traditional Indian households gear up for their yearly stock of papad,achar, murabba and what not. I remember my childhood days when i enthusiastically used to help my mom in making potato papad and other varieties.I used to run to the terrace to keep a watch on birds who were always ready to taste these items. When my grandparents were in Indore, my nani also did a lot of experiments which always turned out to be yummy. The days are no longer the same (at least in urban households) as most of us are tied up in the cobwebs of life and prefer buying ready-to-eat things. But i still enjoy making a lot of sun dried items . These Veg fritters(sandage) are one of my favorites and extremelyyy easy to make. I recently made them for my cousin who is absolutely in love with these. Take a look at one of the simplest recipe:

Ingredients:
- 2 medium sized Lauki /Bottle Gourd
- 4-5 Carrots
- 4-5 Green Chillies
- Red Chilly Powder to taste
- 1 tspn Cumin Seeds
- Salt to taste
Makes: 30-40 medium sized fritters
How To Make:
- Wash and peel lauki.Grate it -discarding the seeds.
- Grate carrots and mix it with the grated lauki.
- Add chopped green chillies , salt, chilli powder and cumin seeds. Mix well. Don't squeeze the mixture.
- Make small balls of this mixture , press gently to flatten them.
- Spread these fritters on a thick plastic sheet or plate and sun dry them till they become crisp.
- It takes 3-4 days to dry these fritters and after drying these fritter shrink to a smaller size.
- Store these in an air-tight container.
- Fry on low flame in oil till golden brown before serving. Don't over fry .
- These go very well with daal khichdi, curd-rice or even with plain chapati.
