Carrot Pachadi
At home , every meal is incomplete without an accompaniment . Be it a spicy chatni or the soothing raita ,there is no maza without these add-on's. So to break the monotony of the monday-morning-blue's syndrome, i made a superb combo for our lunch box - spicy vegetable pulao and carrot pachadi.
Pacahdi is an authentic south-Indian accompaniment -which may be spicy , sweet or tangy (depending on the region and the ingredients used) and is usually made with vegetables & vegetable peels / dals. Any pacahadi with curds as one of the main ingredients , usually resembles raita.Take a look at this yummy Carrot Pachadi-
Ingredients:

Ingredients:
- 2 medium carrots (finely chopped or grated)- you can also steam the chopped carrots.
- 2-3 Green Chillies (finely chopped)
- 1 cup plain Sour Yogurt
- 1 tspn Mustard Seeds
- A pinch of asafoetida
- 3-4 Curry leaves
- 1/2 tspn Urad Daal
- 1/2 tspn Sugar
- 1 tspn Oil
- Salt to taste
Cooking Time: 5-7 minutes
Serves: 4
Method:
- Take the grated /chopped carrot in a mixing bowl.
- Add yogurt ,salt & sugar. Mix well.
- Heat oil in a pan. Add asafoetida, mustard seeds (let them splutter), curry leaves , chopped green chillies and urad daal. Let the urad daal turn golden brown.
- Add this tempering to the carrot-yogurt mixture.
- Refrigerate for 10 mins. Serve with vegetable fried rice or biryani.
You can also make this pachadi with beetroot , cucumber or mix vegetables . Some other ingredients like ginger paste and grated coconut can also be added as per your taste.
