Banana Cake
Banana- the thick-skinned quintessentially nutritive fruit. Well, I was never too fond of banana even though the so-called 'health columns' of newspapers and magazine were flooded with the benefits of this humble fruit. So last week, when I realized that there are few ripe banana's at home, all I could think of was to make a quick dessert using them. And suddenly I came across a recipe on the net for Banana bread. So I took the liberty of tweaking the recipe and made this super-easy Banana Cake in which I used wheat flour instead of white flour. To my surprise, the cake came out very well. Here comes the recipe:
Preparation time: 5-10 minutes
Cooking time: 30 minutes
Ingredients
4-5 medium ripe bananas
1.5 cups whole wheat flour
1 tsp baking powder
½ tsp baking soda
a pinch of salt
½ cup regular sugar
⅔ cup oil
1 tsp Vanilla essence
1 small katori chopped Almonds/ Cashews
Nutmeg powder
Method
Let it cool down and then cut this moist Banana cake into slices and serve it with coffee. I am sure it sounds like a cool idea for a relaxing evening.

Method
- Peel the bananas and mash them.
- Add sugar,oil and vanilla essence in the banana puree and blend it well.
- Fold the dry ingredients into the banana puree and blend it till the batter is of medium consistency.
- Pour the batter into a greased baking tin.
- Add the chopped dry fruits and sprinkle the nutmeg powder to add a spicy taste and aroma to the cake. You can also add cinnamon powder.
- Shake the pan so that the batter spreads evenly in the baking tin.
- Bake for 30 minutes in a gas oven or in a preheated oven at 180 degrees C/350 degrees F for 45 or just take the toothpick test.
Let it cool down and then cut this moist Banana cake into slices and serve it with coffee. I am sure it sounds like a cool idea for a relaxing evening.
