Milk Powder Barfi

It has been quite some time now since I posted a recipe. To be honest, the passionate cook in me, as if has taken a back seat and it is the robotic self who has taken over. But then I watched this movie Julie and Julia and it spurred the cook in me.     

The movie is the story of Julie who is not so happy about her job and one fine day, decides to do something she enjoys. Yes! you guessed it right- Cooking. She decides to write a blog and to cook the recipes in Mastering the Art of French Cooking by Julia Child in one year. I was quite swept away by the movie and instantly decided to try something new. 

They say that 'When life gives you Lemons- make Lemonade'. Similarly, when a friend gives you milk powder- make this barfi (LOL). Jokes apart.One of my friends had given me this big pack of milk powder and when I thought of experimenting in the kitchen, I knew what I want to cook.

 So, here it is - an extremely simple and hassle-free recipe for barfi which you can try anytime. Also, this will break the monotony of the 'mithai-making' ritual during the festivities.

Ingredients:

  • 1 cup milk powder
  • 1/2 cup powdered sugar
  • 1/4 cup milk
  • 1/4 cup ghee
  • Few Saffron strands soaked in water, dry fruits for garnishing 

Preparation Time: 5-10 minutes

Cooking Time: 10-15 minutes

Makes 10-12 medium sized pieces

Method
  • Heat ghee in a non-stick pan on low flame until it melts.
  • Add milk powder and mix well. Now add milk and mix as thoroughly.
  • Add the powdered sugar and keep stirring continuously to make sure there are no lumps.
  • Cook the mixture till it starts leaving the sides and takes the form of a soft lump .
  • Grease a plate and transfer this mixture and flatten it with a spatula or bowl.
  • Garnish the set mixture with the soaked saffron strands and dry-fruits. 
  • Make small square marks with a knife and leave it as it is.
  • Allow it to cool and set. Take out the pieces with a knife. 
  • Store at room temperature.
P.S- You can also try adding mango pulp or chocolate powder to bring some variations as per your choice.
