Tangy Tomato Macaroni
Feels good to be back after a brief hiatus :-)) With festivity in the air , i decided to experiment with Macaroni . I was pretty sure that hubby is going to be happy with the change as he is quite fond of such delicacies. So I rolled up my sleeves and started with full enthusiasm . Here's the recipe :
Ingredients:
Elbow Macaroni: 3 cups
1 Capsicum (medium)- finely chopped
2 Onions (medium) -chopped into thin slices
Black Pepper powder -1 1/2 teaspoon
Oil-1 teaspoon
Salt to taste
Water
For Tomato Sauce:
4 tomatoes -cut into cubes
Black Pepper powder -1 1/2 teaspoon
Garlic Cloves-3-4
Vinegar -1 tablespoon
1 teaspoon oil
Salt & Sugar to taste
Preparation Time : 20 minutes
Cooking Time: 20 minutes
Serves - 2-3
Method:
- Boil Macaroni in a pot with some salt for 7-8 minutes and drain it. Add cold water to the Macaroni and drain it again. This makes sure the Macaroni is not sticky. Keep Macaroni aside.
- Heat oil in a pan .Add the chopped vegetables and saute till they are bit tender.
- Add salt and pepper to it and keep it aside.
- Grind the tomatoes and garlic cloves into thin paste and keep it aside.
- Heat oil in a pan .Add the garlic - tomato paste and let it boil for 8-10 minutes.
- Add pepper,vinegar ,salt and sugar.
- Let it simmer for another 5 minutes. Keep it aside.
- Now heat the sauteed vegetables for 2 minutes and add the cooked Macaroni and stir it on medium flame so that it doesn't stick .
- Add the fresh tomato sauce and mix well.
- Using this tomato sauce ensures minimal usage of oil .
For Serving :
- For serving the dish, use deep bowls .
- Put a generous serving of Macaroni and a garnishing as per your taste.
- For garnishing ,you can use:
- Chilly Flakes
- Tomato Ketchup
- White Pepper Powder or anything as per your liking.
- I had added sliced boiled egg as a topping for my hubby as it is his all time favourite.This is how it looked:
I was quite delighted to see hubby's reaction after having it as the recipe had turned out great. It was quite healthy and filling as well. So try it today and i am sure is gonna be a delight for your family as well ! Happy Cooking !
