Lauki-Moong Dal Soup (लौकी -मूंग दाल सूप )
When it comes to my favourite food, I love anything which has a lot of vegetables. I am quite fond of Salads but hubby shudders by the sheer thought of having veggies and salad in his platter. So this time I thought of making something which is packed with nutrition and I made this Lauki- Moong Dal Soup which is delicious and packed with nutrition. You can replace dinner with this sumptuous soup or can have it with Dalia (recipe next on the blog) . Lauki (Bottle Gourd) has a low calorie content ,reduces obesity and helps detoxify the body. Here comes the recipe :
Ingredients:
- 1 small Bottle Gourd (लौकी ) -diced
- 1 small Onion- diced
- 1 bowl Green Moong Dal (soaked for an hour)
- 1 medium Tomato- cubed
- 2 spoons Ginger-Garlic Paste
- 1 teaspoon Cumin Seeds (जीरा)
- 1 teaspoon Turmeric Powder
- 2 teaspoon Black Pepper Powder(कालीमिर्च )
- 1 tablespoon Oil
- Salt to taste
- Juice of 1 Lemon
Preparation Time- 20 mins.
Serves: 4 people
Method:
- Heat oil in pressure cooker and add cumin seeds. Let them crackle .
- Add turmeric powder and add onions, lauki, tomatoes ,ginger-garlic paste, moong dal and salt.
- Pressure cook (2 whistles) and let it cool down.
- Blend the cooked mixture to a soup like consistency.
- Add some water and boil it for 3-4 minutes.
- Add pepper powder and lemon juice.
- Garnish it with fresh coriander and serve hot .
