DUM AALOO
Whenever there is an occasion at home (read birthday) , most the time all we do is order food from a nearby restaurant as going out after a busy day at office is actually tiring and irritating as well. Though it is convenient , at the very same time we are not thrilled at all with the restaurant food as all the gravies taste the same . So yesterday (on my Father-in-law's birthday) fortunately i reached home well in time and decided to cook this Dum Aaloo (दम आलू )as his budday special.The cute looking baby potatoes are cooked in a delicious and rich gravy under pressure (dum) and are a perfect accompaniment with Paratha or Naan or even Steamed Rice. Here comes the recipe:

- 10-12 Baby Potatoes (washed, peeled and pricked)
- 2 medium Onions -finely chopped
- 1 medium Tomato -finely chopped
- 2 tablespoon Ginger-Garlic Paste
- 4-5 dry Red Chillies
- 1 teaspoon Kasuri Methi
- 1/2 cup chopped Coriander
- 2 tablespoon Malvani Masala
- 1 teaspoon Turmeric Powder
- Salt to taste
- Oil for Frying
Cooking Time: 20-25 minutes
Serves: 4 people
Method:
- Heat oil in a thick bottom pan/ kadhai and fry the baby potatoes till they turn light brown.Keep them aside.
- Grind the chopped onions, tomatoes,kasuri methi, red chillies & coriander in a paste. Keep it bit coarse.
- In the same pan , add the ginger garlic paste and saute till it turns light brown.
- Now add the prepared coarse paste/ masala and saute for 2-3 minutes. Add turmeric powder and saute till the masala starts leaving the pan.
- At this stage add the Malvani Masala which is easily available at all grocery shops or Food Bazaar.
- Now add the fried baby potatoes . Add salt and some water.
- Cover the pan with a lid and cook the potatoes on slow flame for 10 minutes.
- And the Dum Aaloo is ready. Garnish it with fresh coriander and serve hot with Naan or Steamed Rice.
If you don't want much gravy or want to have it bit dry , remove the lid and cook till the water content reduces. HAPPY COOKING !
