Sabzi Ki Tehri : Leftover Recipe

During the Ganpati Festival, we have to make so many things as they are a part of the naivaidya. So there is always a lot of food left in the fridge. I always prefer utilizing all this food to the fullest and ensure nothing is wasted. This recipe is the outcome of such an effort :-) Tahari,Tehri or Tehari is the name given to thevegetarian version of biryani . There were 3 sabzi's in the fridge- baingan , potato and peas and cauliflower. So herez what i did:
- Prepare steamed rice (i cooked 2 small katori rice keeping in mind the quantity of leftover veggies) Keep it aside.
- Its better if you have separate grains of the cooked rice as the cooked veggies may make the rice mushy. But the taste will surely remain the same even if the water content in the rice is slightly on a higher side .
- Heat a pan and add 1 tspn ginger-garlic paste. Dont add oil at all as the cooked veggies already have some oil. Stir till the raw smell goes away.
- Now add the leftover veggies one by one .
- Add salt as per taste (though the veggies have salt too, it may be needed when the veggies are added to rice) ,1 tspn Coriander powder and 1 tspn Everest Sabzi Masala.Mix well. This is how it looked:
Add the veggie mixture to the cooked rice and stir well . Make sure you mix it well so that the rice is evenly covered with the veggies. You can have different versions of the dish depending on the leftover veggies. Other spices can also be adjusted as per you taste buds.
Garnish the Tehri with fresh coriander and enjoy it with curds or kachumbar salad. HAPPY COOKING !
