Eggless Chocolate-Dry Figs Cake
Its time to say Goodbye 2013. The last week of the year comes with mixed emotions -excitement to welcome new year, nostalgic moments of the past months ,fun and cheer of Christmas and what not. On Christmas , it seems everyone is saying 'Lets paint the World Red' . So as such for most of us, Christmas is not only about Santa Claus and presents but also about bonding. And yes..Cooking and Baking too :-)
It is one of the biggest pleasures for me to bake a cake for Christmas and New year and gather lotsss of people to enjoy. This time we were invited by a friend for a get together on Christmas so i didn't get an opportunity to put my menu and plan the dishes to be served but i didn't want to break the baking ritual .So thought of baking an egg-less chocolate cake with a slight modification. Figs and chocolate really go very well together but the sad part is that the combination is not seen too often. Ideally the cake should be made with fresh figs for that moist ,fudgy and rich taste. But as i decided to bake this one at the eleventh hour , i had to use dry figs. Thankfully the result was equally good if not better.

Ingredients
250 gms Maida
10 Dry Figs (can be increased or decreased as per preference)
1 tin Milkmaid (400 gms)
4-5 spoons Cocoa Powder (can increase the quantity for a dark chocolate taste)
1/2 cup Full Cream Milk
1 1/2 tspn Baking Powder
1/2 tspn Baking Soda
1 tspn Ghee/ Butter
2 tspn Vanilla Essence
1/2 cup chopped dryfuits
Preparation Time: 20 mins
Method

Method
- Soak the finely chopped figs in boiling water for 20 mins
- Mix the dry ingredients -maida, baking powder ,cocoa powder and baking soda in a bowl ad kieep it aside
- Mix milkmaid and butter and beat for 5 mins
- Add the dry mixture in small portions to the milkmaid and blend it till done. Add full cream milk to maintain the consistency of the batter.
- Add the soaked figs and vanilla essence and mix well
- Grease the baking pot and pour the batter
- Bake for 1 hour (if you are using a gas oven) or at 180c for 40 minutes if using a microwave.
- Let it cool for 10-15 mins and then invert. You can serve the pieces with a topping of Chocolate sauce .
