TOMCHI RICE
Ingredients:
- Basmati Rice - 2 katori
- 4-5 Ripe Tomatoes
- 1 Capsicum finely chopped
- 2 medium Onions- chopped into thin slices
- Finely chopped Cabbage -1 small katori
- Ginger-Garlic paste- 1-2 tspn
- Turmeric Powder- 1 tspn
- Mustard Seeds
- 2 tspn Chole Masala / Vegetable Masala
- Salt to taste
- Oil
Cooking Time: 20-25 mins
Serves: 4
Method:
- Soak rice for 10 mins., drain water and pressure cook.
- Puree the tomatoes and keep aside.
- Heat oil in a kadhai . Add mustard seeds and let them splutter.
- Now add ginger-garlic paste and chopped veggies. Saute till they become bit tender .Let them be a little crunchy.
- Add turmeric powder and tomato puree. Cook till raw smell of the puree goes off and it becomes dark red.
- Add vegetable masala and salt.
- Add the cooked rice and mix well.
- Garnish with fresh coriander leaves and serve hot with raita and papad.
