Instant Mango Pickle
Homemade preserves are an integral part of every Indian household. Ever wondered your kitchen without the pickle jars the sheer sight of which tickles our taste buds. Though the lifestyle has changed , pickles are one of those few things which remain the same.In our country , almost everything can be made into pickles-Chillies, Carrot , Lemon , Cabbage, Cauliflower, Garlic , Turmeric , Raw mangoes and what not. Mango pickle is the most common one amongst these. Though we make aam / kairi ka achar for the year, in summers this instant kairi ka achar is a must have. It is easy to make and goes well with every meal. Here's the recipe:
Ingredients:
- 1 big raw mango
- Chilli powder -as per taste
- Salt to taste
- 1 tspn Turmeric Powder
- 1 1/2 tspn Asafoetida
- 2 pinches Roasted Fenugreek seed powder
- 1 tblspn Oil
- 1 1/2 tspn Mustard Seeds
Preparation Time:10 mins
Cooking Time: 5 mins
Serves: Can be stored for 1 week in the refirgerator
Method:
- Chop mangoes with skin in small cubes.
- Add salt and chilly powder to chopped mangoes and keep aside.
- Heat oil in a pan. Add asafoetida, fenugreek powder and mustard seeds. Let mustard seeds crackle.
- Turn off the flame. Now add turmeric powder .
- Pour this tempering to the chopped mangoes. Mix well and the achar is ready to serve.
This achar goes really well with curd rice or dal chawal and is a healthier option due to less oil content.You can also use any achar masala available in market (though in limited quantity) in place of red chilly powder.
